In a mixing bowl, combine balsamic vinegar and honey. Whisk until combined.
Let peaches rest in balsamic mixture until grill is ready.
Heat up grill.
When grill is at temperature, brush grates with olive oil.
Place peaches on grill, over direct heat. Brush generously with remaining balsamic mixture. Grill about 4 minutes each side or until desired tenderness and color.
Lightly salt.
Grate desired amount of Gruyere cheese over peaches and top with whipped cream.
