Ingredients
  

  • 4 tablespoon butter
  • 1 small onion chopped
  • 2 stalks celery chopped
  • 2 tablespoon flour
  • 4 cups chicken broth
  • 1 cup creamy peanut butter
  • 1/2 teaspoon celery salt
  • 1/4 teaspoon salt
  • 2 teaspoon lemon juice
  • 1/4 cup ground peanuts

Instructions
 

  • Melt butter in a dutch oven or large saucepan.
  • Add onion & celery. Saute until tender, 5 -10 minutes.
  • Add flour, mix continuously until flour is a peanut butter colored paste. Do not stop mixing mixture & do not let it burn.
  • Add chicken broth, stir, and bring to a light boil.
  • Reduce heat to low, cover and simmer for 30 minutes.
  • Strain completely.
  • Add peanut butter, celery salt, salt and lemon juice.
  • Stir over low heat until combined.
  • Serve, sprinkle peanuts over soup and enjoy.
