Ingredients

  • 2 tablespoon - olive oil
  • 1 1/2 cup - white rice
  • 2 3/4 cup - water
  • 1 cup - salsa "medium" - fresh is best
  • 1 packet chicken and tomato bouillon
  • 1/4 teaspoon - garlic powder
  • 1/8 teaspoon - salt
  • 1/8 teaspoon - cumin
  • 1 handful of halved olives optional
  • 1 generous pinch of chopped cilantro optional
  • 1 chipotle hot sauce optional

Instructions

  • In a medium saucepan heat olive oil over medium heat. Add rice and brown. Stir often - do not let it burn - this will take a few minutes.
  • Add water, salsa, bouillon, garlic, salt, cumin, salt and cilantro. Stir well and bring to a boil. Let boil for a minute or two, put a tight fitting lid on pot and reduce heat to low.
  • Without removing lid - cook on low heat for 25 minutes. After 25 minutes - remove pot from heat, remove lid, fluff rice with a fork and toss in olives. Recover and let rice sit, off of heat, for another 10 - 15 minutes before serving.
  • Fluff rice again and serve. Top with a bit more cilantro or a few shakes of chipotle hot sauce if ya like it hot. Enjoy :)
