Sausage, Egg & Cheese Breakfast Tacos are not only effortless to whip up – they’re a total crowd pleaser. I make these tacos often (or burritos if you prefer) when I have friends & family visiting – especially during the busy holiday season.
You’ll have these tacos ready in about 15 minutes. Crumble & brown the sausage, scramble the eggs, combine and dump in the cheese. Easy peasy!
Time to eat!
I serve these breakfast tacos buffet style with tortillas, salsas of varying heat, hot sauce, sour cream & guacamole. I prefer them with just salsa – but some people prefer the works.
Oh, and I’ve learned to just double the recipe when I have company. These tacos disappear – and quick.

Hatfield Sausage, Egg & Cheese Breakfast Tacos
- 16 oz Hatfield® Recipe Essentials Country Ground Sausage
- 8 large eggs beaten
- 1 tbsp butter
- 1 1/2 cup shredded cheddar cheese I use Mexican Blend
- salsa, hot sauce, sour cream, guacamole optional toppings
- In a skillet, crumble and brown sausage. Drain any excess grease.
- Scramble eggs in butter. You can do this in a separate skillet or use the same skillet – just remove sausage after browned.
- Combine sausage and eggs. Add shredded cheese and combine over low heat until melted.
- Serve immediately in tortillas – taco or burrito style. Top with salsa, hot sauce, sour cream or guacamole if preferred.
