Chocolate Chip Mint Cookies
Ingredients
- 1/2 cup salted butter softened
- 1/2 cup brown sugar packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 1/2 cup mint chocolate chips
Instructions
- Preheat oven to 375°.
- In a stand mixer or large mixing bowl, cream together butter and sugars.
- Beat in eggs and vanilla until thoroughly combined.
- Add in flour, cocoa powder, baking soda and salt until combined.
- Fold in mint chocolate chips.
- Drop heaping tablespoons of cookie dough on ungreased cookie sheet - leaving 2-3 inches space between.
- Bake for 8-10 minutes or until cookie is set.
- Let rest on cookie sheet for a minute and transfer to wire rack to cool.
