Light, fluffy and tender Low Carb & Keto Flaxseed Pancakes that are super simple to make. Awesome breakfast for anyone restricting carbs – but also great for anyone who enjoys a healthy breakfast!

Flaxseed Pancakes (Low Carb Keto)

Pancakes – a breakfast comfort food. Pancake options, combinations and toppings are endless. The humble pancake has been reinvented a million different ways and people still find joy in getting creative with them.

With a diabetic in the family I had to rethink my pancake recipes. My goal was to make low-carb pancakes that everyone could enjoy. One breakfast for all.

I worked on some whole wheat pancakes and coconut flour pancakes, both delicious and will be shared in the future. Click here for my Whole Wheat Cottage Cheese Pancake – they’re delicious!

Flaxseed Meal

The goal was to make a pancake that was almost carb & sugar-free. The ingredient to reach for – the almighty ground flaxseed meal. (Click for link)

Ground flax is awesome. It’s an ingredient I use often – it tastes great, it’s filling, it packs some serious nutrition and it’s cheap!  

Add it to yogurt, smoothies and to baked goodies. I love making breakfast foods with it – I make a mean flax porridge and endless flax mug muffin combinations.

Preparation

Instructions are straight forward here.

Combine all the ingredients and get them on the griddle.

This recipe makes about four flaxseed pancakes – enough for one hearty appetite. This recipe easily doubles or triples.

You’ll definitely know that it’s not your regular all-purpose flour pancake, but man-oh-man, it sure is surprisingly close. Light, fluffy and tender – with a drizzle of syrup some might not even notice the difference.  

Everyone I serve these Flaxseed Pancakes to are in disbelief. They can’t believe they’re low-carb, flourless pancakes. Someone said they remind her of “French Toast Pancakes”. I’ll take it!

People without any dietary restrictions can appreciate this pancake as much as those who have to count carbs. Low-Carb Keto Pancakes for all!

Flaxseed Pancakes

Ingredients
  

  • 3 tablespoon flaxseed meal
  • 1 tablespoon stevia in the raw or preferred low cal sweetener
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • pinch of salt
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • butter about 1 tablespoon

Instructions
 

  • In a small bowl combine flaxseed meal, stevia, baking powder, cinnamon and salt.
  • Whisk in eggs and vanilla extract.
  • Add butter to griddle or frying pan and heat to medium heat. I set my griddle at about 250°F.
  • Pour out pancakes in about 1/4 cup portions – I use a ladle. You should get 4 – 5 pancakes.
  • Cook for 3-5 minutes or until set and golden brown, flip and cook for another 2-3 minutes.
  • Serve and enjoy. I serve with butter and an assortment of syrups & jams. Sugar free syrup, real maple syrup, chocolate syrup….

Notes

If not counting carbs, go ahead and use your preferred sugar. 
This recipe makes about 4 pancakes – 1 hearty serving. Recipe can easily be tripled or doubled.
These pancakes are great made ahead and reheated.

      I came across this recipe for the know carb flaxseed. Pancakes. And so happy I did. Not only were they
      Truly amazing but so easy to make and so low in carbs
      This will be saved to continue using thanks for sharing the only thing. I added was 1 teaspoon of vanilla and to me taste like frenchtoast but better

      Less than 1 gram (notwithstanding the syrup, and excluding fibre)

    Top up this pancake with this raspberry sauce recipe: raspberry sauce; simmer 1 cup fresh raspberries with 2 tablespoons water and sweetener to taste, for 5-10 minutes, breaking the berries with a spatula. Add additional water to thin out to your liking.

    don’t change a thing! I was sceptical, no liquid, three eggs? These are the perfect balance of flax and egg- not a strong flax flavor, light and fluffy. I used the Walden Farms carb free pancake syrup. Best flax recipe since the flaxseed cracker.

    I was a little sceptical about these but am so glad I tried them! I’m following a low fodmap diet and eating flax to improve fibre intake after a year of dietary problems. This is a great recipe for really lovely pancakes! Thanks for sharing! Also, I see you are from Lancaster county… I live in Lancaster, England 🙂

    I enjoyed your flax meal pancakes, thought it was tasty and it didn’t make my stomach blow as the traditional pancakes tend to have that side effect on me. It’s nice to feel full without a blow. 🙂 Next time around I would make a berry compote to top it off. I was in a pinch so I used coconut oil to spread on them. My husband was not too fond of them so I’ll make it for myself when he’s not around.
